– 3 tbsp salt-free butter
– 1/2 small onion finely chopped
– 1/4 cup flour
– 1 cup cream
– 3 vegetable juices
– A pinch of nutmeg
– 2 bay leaves
– Salt and pepper as per taste
– 2 carrots grated
– 3 cups broccoli
– 8 cheeses cut into cubes.
How to Make Broccoli Creamy Soup Recipe
Step 1 – First of all, heat a pan on medium flame and melt the butter in it. Then cook the onion in it till it becomes transparent. Keep stirring in between.
Step 2 – After this, remove the onion from the flame and keep it on the other side. In a large pot over medium heat, whisk together the milk, cream and flour.
Step 3 – Keep stirring occasionally till the mixture becomes smooth. Then add vegetable juice to it. Once again keep stirring to make the mixture smooth.
Step 4 – Now add nutmeg, bay leaf, salt and chilli to it and let the mixture cook on low flame for about 20 minutes without covering it.
Step 5 – Mix the fried onions, broccoli, carrots and cook on low flame for 20 minutes.
Step 6 – Now add cheese to it and leave it to melt completely. If needed more vegetable juice can be added.
