For making Dhokla (15 pieces)

  • 1 cup besan
  • 2 tsp semolina / rava
  • 1 cup buttermilk / curd
  • 2 teaspoons sugar
  • 1 tsp turmeric
  • 2 tsp Eno
  • 1 tbsp lemon juice
  • 1 tbsp oil
  • salt to taste

to Make Tadka

  • 1 tbsp oil
  • 1/2 tsp mustard
  • 2 finely chopped green chilies
  • 1/2 tsp asafoetida
  • 1 tbsp lemon juice
  • 1 teaspoon sugar
  • 2 tbsp water
  • few curry leaves/coriander leaves

Dhokla may be a Gujarati dish but it has made its place in the hearts of people almost all over India. People love to eat Dhokla as a snack and as a light meal. If you are on a diet and do not like cornflakes and oats, then dhokla is the perfect dish for you. The Gujarati snack Dhokla is made by steaming. Therefore it contains less calories. Let us tell you that there are only 160 calories in 100 grams of Dhokla. Besan is rich in fiber, iron, which helps in the formation of new cells in the body. Along with this, you can not have any kind of stomach related problem by eating it. If you also want to make soft-spongy dhokla at home like the market, then today we tell you about its recipe and that too step by step.

Time: 35 to 40 minutes

Step 1 – First of all, prepare the batter for Dhokla. For this, take a big bowl and prepare a solution by adding gram flour, semolina, salt, lemon juice, curd or buttermilk and water.

Step 2 – Beat the gram flour mixture well so that no lumps are formed in it. Also keep in mind that this solution should neither be too thin nor too thick.

Step 3 – Now cover this batter with a plate and keep it for 5-7 minutes.

Step 4 – On the other side, put water to boil in a cooker, idli stand or a pan with a lid.

Step 5 – Now take a medium deep plate and grease the entire place with ghee or oil so that your batter does not stick in it.

Step 6 – During this, add 1 packet Eno to the gram flour batter and mix it well and immediately spread it evenly in an oiled plate.

Step 7 – Place a bowl or stand in the vessel in which the water is kept for boiling and place the Dhokla plate on top of it and cover the vessel from above so that the steam does not escape.

Step 8 – Now after 10-12 minutes, carefully remove the lid from the vessel and insert a knife into the dhokla to see if the solution is not sticking to it. If it is then let it cook for 3 more minutes then turn off the gas.

Step 9 – With the help of a grip, take out the dhokla plate from the water vessel and set it aside to cool down.

Step 10 – After that cut into square pieces with the knife of Dhokla. Then pour sweet water tempering over it.

To make the dhokla spongy and tasty, tempering is applied on top of it. To make it, heat oil in a pan and then add mustard seeds, curry leaves, green chilies and asafetida. After that add 2 cups of water, lemon juice and sugar on top and let it boil. As soon as the sugar dissolves, then pour this water and tempering well over the dhokla, so that the dhokla absorbs the water and it becomes spongy. Now serve it with coconut chutney or green coriander chutney. If you want, you can have dhokla without chutney also. This in itself is enough.
